Salt Ling & Tatties
Traditional salt ling served with ness crushed tatties & Shetland butter
£10.95
Ling, the largest of the cod family, caught in North Sea waters, soaked in a barrel of sea salt & water brine over a period of many hours. This traditional method, common to Shetland, makes this easily digested nutritious fish ideal for preserving. The flavour is 'draan-oot' in a slow simmer.

Pan Fried Herring
Locally landed herring fillets coated in fine oatmeal, pan fried and served with chunky lemon wedges
£10.95

Fished by pelagic trawlers that follow this seasonal fish, its popularity has returned after low stocks of herring meant it was no longer a permitted catch. Recognised as one of the most nutritional foods, plentiful in those rich omega oils. Our chef pan fries them to bring out the flavour - give the lemon a good squeeze over the fillets - enjoy!
